  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, whisk together the gluten-free flour blend, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in the boiling water, gradually, until the batter becomes smooth.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat.
  9. Add the chocolate chips to the hot cream and let it sit for 5 minutes. Stir until smooth and creamy.
  10. Stir in the peppermint extract and green food coloring (if desired).
  11. Place one cake layer on a serving plate and spread a generous amount of the chocolate mint ganache on top.
  12. Top with the second cake layer and frost the entire cake with the remaining ganache.
  13. Refrigerate for at least 2 hours to allow the ganache to set. Serve chilled and enjoy!
